The Ultimate Low Fat Low Sugar Banana Bread

- 4 cups of flour shopping list
- 1 cup white sugar shopping list
- 1 cup splenda (or generic brand which i use) shopping list
- 2 tsp baking soda shopping list
- 2 tsp baking powder shopping list
- 2 tsp salt shopping list
- 2 tsp ginger powder shopping list
- 2 tsp cinnamon powder shopping list
- 1/2 tsp nutmeg shopping list
- 4 eggs shopping list
- 5 - 6 super riped bananas (if large, use 5, if smaller use 6) shopping list
- 1 - 15 oz can unsweetened apple sauce shopping list
- 6 tbs milk shopping list
- 2 tsp vanilla extract shopping list
- 1 cup raisins shopping list
How to make it
- Begin by preheating your oven to 350 degrees
- get 3 mixing bowls, 1 large and 2 medium bowls
- in the large mixing bowl, measure dry ingredients and level off measuring. add all ingredients to large mixing bowl and mix well (i use a whisk) and set aside.
- in one of the medium bowls, whisk eggs.
- add milk and vanilla extract and whisk again. set aside.
- in the third mixing bowl, mash bananas with a potato masher until a smooth consistency is reached (this step becomes easier as the bananas get riper)
- add applesauce and continue mashing.
- add egg mixture to banana and applesauce mixture and whisk together.
- add half of the dry ingredients to the wet ingredients and genlty blend. i use a spatula and turn ingedients on to themselves.
- add remaining dry ingredients and stir, add raisins and continue mixing until blended but do not overbeat.
- divide batter in too 2 loaf pans - i use a pyrex glass 9 x 5 pan.
- drop pans slightly on counter to tap out air bubbles.
- place in oven and bake for 30 minutes, then turn in oven and bake another 30 minutes or until a toothpick comes out dry.
- let cool for about 20 minutes and remove from pans and let cool.
