Curry Chicken Over Brown Rice Recipe
This recipe comes from the Bailey Estate. I purchased the family collection in Addison, Texas in 1999.

Ingredients
  • 2 tablespoons olive oil
  • 1 large white onion chopped
  • 1 tablespoon curry powder
  • 2 large fresh tomatoes chopped
  • 2 garlic cloves chopped
  • 2 tablespoons minced fresh gingerroot
  • 1 cup chicken broth
  • 1 pound cooked chicken cubes
  • 1 teaspoon hot red pepper flakes

Directions
  1. In deep heavy frying pan heat oil over medium high heat and cook onion 3 minutes.
  2. Add curry powder, tomatoes, garlic, ginger and red pepper flakes.
  3. Continue to cook stirring often for 10 minutes longer.
  4. Stir in broth scraping up browned bits from pan then bring to boil and add chicken.
  5. Reduce heat to low and simmer gently for 15 minutes stirring often.
  6. Serve over hot brown rice.
