Belgian Ale Chicken Wings Recipe

The wings are boiled in beer that is reduced to a glaze and contrasts the spice of the wing sauce. The fermentation flavors of any Belgian ale really help give depth of flavor to this dish.

Ingredients
  • Chicken Wings, As many as needed
  • Belgian Ale, Enough to cover the wings when placed in a bowl, I prefer to use a cheaper brand like Leffe. Spending $15 on a nice Trippel would be wasting it here.
  • Serrano Peppers
  • Frank's Hot Sauce
  • Blue Cheese Dressing
  • Celery/ carrot if you'd like

Directions
  1. Cut wings into drumettes and flats, discard tips
  2. Mince Serrano
  3. Combine in a large bowl and cover with beer
  4. Marinate in fridge a few hours or overnight
  5. Heat a large iron skillet and add wings and beer. Turn wings so fat side is up and cook until beer has reduced to a glaze, stirring wings half way through, then more often as needed.
  6. Add hot sauce and cook to reduce sauce and get it to stick to the wings.
  7. Serve with dressing.

I do the same with brats and other sausages. I never thought to use chicken wings. Great post and high 5 to you!

Alterations


I have done this plate with many different types of beer, mead, , bourbon/spirits, and white wine. All turn out good, but I find the best flavor dynamic comes from the Belgian Ales.
