Syrian Chicken Salad

- 1 chicken shopping list
- 1 cup rice, uncooked shopping list
- 1 cup celery, minced shopping list
- 2 bunches scallions, chopped finely ~12 green onions shopping list
- 2 small packages almond slivers-toasted 1/2 to 1 cup nuts shopping list
- 1small jar roasted red peppers or pimento--about 1/3 cup roasted red peppers, julienned shopping list
- Mayonnaise-- my skinny friend throws in lots of mayo, and I use as little as possible. (the pimento jar has juice) shopping list
How to make it
- Boil the chicken until tender; bone and shred. refrigerate. I cook the chicken with onion, carrot, celery, sage, thyme, rosemary.
- Cook the 1 cup of rice according to your directions; refrigerate.
- When all is prepped, combine all the ingredients and mix together well.
- I suggest cooking the rice and the chicken a day ahead of serving it. Good for guests. everybody likes, even kids.
