two more party salads I asked for the recipes! Both are really good and each a bit different!

Ingredients
  • Mango Curry Chicken Salad:
  • 1/2 cup of bottled mango grilling or glaze sauce
  • 1 1/2 lbs cooked chicken breast chopped
  • 1/2 cup mayonnaise
  • 1 tbs curry powder or to taste
  • 1/2 cup red onion chopped
  • 1 cup golden rasisns
  • 1 green apple, peeled and chopped
  • 4 to 6 cups mixed greens
  • Raspberry Chicken salad
  • 3 Tbs bottled Raspberry dessert sauce
  • 2 Tbs red wine vinegar
  • 1/2 tsp dill weed
  • 1/4 cup extra virgin olive oil
  • 2 cups chopped cooked chicken
  • 1 small green apples peeled and chopped
  • 1/2 cup peacns toasted and chopped
  • 1/2 cup thinly sliced red onion
  • 6 cups mixed salad greens

Directions
  1. Prep time does not include cooking of chicken.
  2. These are great for leftover chicken too!
  3. First salad:
  4. Mix mango glaze with mayo, curry powder and onion together.
  5. In another bowl toss chicken, raisins and onions and apples
  6. Add dressing to chicken and toss
  7. Season with salt and pepper
  8. Serve on mixed greens
  9. Second salad
  10. Mix the raspberry sauce, vinegar and dill.
  11. Slowly add oil to incorporatre and make a dressing
  12. In separate bowl add, chicken, apple, nuts and onions.
  13. Toss with dressing
  14. Season with salt and pepper
  15. Chill 1 hour
  16. Serve over greens
