Lemon Pepper Balsamic Halibut Fillets Recipe
LEMON PEPPER BALSAMIC HALIBUT FILLETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982.

Ingredients
  • 1 tablespoon olive oil
  • 4 halibut fillets
  • Lemon pepper seasoning
  • 14 ounces seasoned chicken broth with Italian herbs
  • 3 tablespoon balsamic vinegar
  • 1-1/2 tablespoons cornstarch
  • Hot cooked rice cooked without salt

Directions
  1. Heat oil in skillet then add halibut skin side up and cook until browned about 5 minutes.
  2. Turn halibut and season with lemon pepper then add 1/2 cup broth and heat to a boil.
  3. Cover and cook over low heat 5 minutes or until done then remove halibut and keep warm.
  4. Mix remaining broth, vinegar and cornstarch.
  5. Add to skillet and cook and stir until mixture boils and thickens.
  6. Place rice in bowls and top with halibut then spoon sauce over all.
