Chicken With Thyme And Mustard Recipe
Perfect for when the weather gets cooler out. A comfort food. Serve this with a vegetable and salad and you have a whole meal.

Ingredients
  • 2 tablespoons olive oil
  • 2 pounds bone in chicken thighs
  • 3 tablespoons Dijon mustard
  • 3 cups chicken stock or broth
  • 1/2 cup good quality red wine (If you won't drink it, don't cook with it!)
  • 6 sprigs fresh thyme or 1 teaspoon dried thyme
  • 8 to 12 ounces small new poatoes
  • Ground black pepper

Directions
  1. In Dutch oven, heat oil over medium heat.
  2. Add chicken and brown on all sides, turning frequently.
  3. Add mustard, stock or broth, wine and thyme to pan. Bring to a boil
  4. Reduce heat, cover and simmer 30 to 40 minutes.
  5. Add potatoes. Cover and simmer 20 to 30 minutes or until chicken is cooked and potatoes are tender.
  6. Season to taste with ground black pepper.
