Chicken with Thyme and Mustard

- 2 tablespoons olive oil shopping list
- 2 pounds bone in chicken thighs shopping list
- 3 tablespoons Dijon mustard shopping list
- 3 cups chicken stock or broth shopping list
- 1/2 cup good quality red wine (If you won't drink it, don't cook with it!) shopping list
- 6 sprigs fresh thyme or 1 teaspoon dried thyme shopping list
- 8 to 12 ounces small new poatoes shopping list
- ground black pepper shopping list
How to make it
- In Dutch oven, heat oil over medium heat.
- Add chicken and brown on all sides, turning frequently.
- Add mustard, stock or broth, wine and thyme to pan. Bring to a boil
- Reduce heat, cover and simmer 30 to 40 minutes.
- Add potatoes. Cover and simmer 20 to 30 minutes or until chicken is cooked and potatoes are tender.
- Season to taste with ground black pepper.
