Pasta Mixed Veggies With Goat Cheese

- 4-6 SERVING INGREDIENTS: shopping list
- 1 pound of penne pasta shopping list
- 1 lg caramelized onions * shopping list
- 1 pound roasted red peppers * or one small jar shopping list
- 3 cups of fresh spinach shopping list
- 4 to 6 artichoke hearts from a jar to taste shopping list
- a good sprinkle of crumbled goat cheese shopping list
- 4 garlic cloves shopping list
- 1/2 cup extra virgin olive oil shopping list
- (optional) grilled sliced chicken strips breast or sauteed shrimp shopping list
How to make it
- METHOD:
- Cook pasta to desired tenderness.while pasta is cooking
- In separate pan, saute garlic and oil
- Add caramelized onions, roasted peppers, fresh spinach and
- artichoke hearts.
- Sautee for 3-5 minutes.
- Add pasta, toss ingredients and top with crumbled goat cheese.
- Add grilled chicken or sauteed shrimp.
- * Caramelized Onions
- Slice in quarters a large mild onion cut into 1/4 inch wide slices
- Heat butter or butter/oil mixture in heavy skillet
- Add onions and small amount of sugar and slowly cook on medium heat
- Cook until onions are caramel colored, stirring often,
- Add a touch of vinegar at end of cooking and stir to deglaze pan. Can be made a day ahead .
- * Roasting Peppers
- Place on broiler pan or whole on
- hot grill.
- Coat lightly with olive oil Broil 5-7 minutes with flesh nearest to heat source. Rotate
- until the flesh closest to the heat blackens and blisters completely.
- Place in a bowl, cover and allow to steam (or put in a closed paper bag)
- Cut pepper in half, remove, stem veins and seeds.
- Or use a jar of peppers if you don't have time to prepare, fresh ones
- ( Fresh is always better )
