Baked Oatmeal For Moms

- 1/2 cup applesauce (or veggie oil) shopping list
- 3/4 cup sugar shopping list
- 2 eggs (preferably organic/free range for more omegas) shopping list
- 1 cup milk (cow, goat, soy, rice, etc. can also use 1/2 yogurt 1/2 milk) shopping list
- 1/2 teaspoon salt shopping list
- 1 tablespoon baking powder shopping list
- 3 cups regular oats shopping list
- 1/2 cup walnuts, pecans or other mix-in (other nuts, dried fruit, etc) (optional) shopping list
- 3 Tablespoons (or 2-3 tea packets) fenugreek (optional) shopping list
- 1-3 Tablespoons milled flax seed (optional) shopping list
- 1-2 tablespoons brown sugar shopping list
- 1/2 teaspoon ground cinnamon shopping list
How to make it
- Beat together applesauce and sugar.
- Mix in eggs, milk, salt, baking powder, oatmeal.Beat well then stir in nuts.
- Pour into a lightly greased pie pan.
- Sprinkle with brown sugar and cinnamon.
- Refrigerate overnight.
- The next morning, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven until firm, about 35-45 minutes. Serve hot.
- Cover leftovers (if any) and microwave individual servings for 20-35 seconds.
