Ingredients
  • 1/4 cup key lime juice or regular lime juice (fresh squeezed0
  • 1/4 cup Thai fish sauce
  • 2 tablespoons honey
  • 3 or 4 tablespoons water
  • 3 minced cloves garlic
  • 2 trimmed and sliced thin scallions
  • 2 or 3 very thin rings of scotch bonnet chili pepper

Directions
  1. Combine lime juice, fish sauce and honey in bowl and whisk until honey dissolves
  2. Stir in remaining ingredients and correct seasonings by adding more lime juice or honey to taste.
  3. Serve immediately.
