Ingredients

8 bratwursts (not pre-cooked)

24 ounces beer (light, dark, German, American, your preference)

2 large onions, quartered and thinly sliced

1 bag sauerkraut, rinsed

good medium-hot or hot mustard (Hengstenberg rules, but a good brown mustard will do)

Directions

Prick the brats all over with a fork, then put in a large saucepan. Add the beer and the onions. Bring to a boil (it will foam!), then reduce heat and simmer for 30 minutes.

Remove the brats and reserve. Remove the onions with a slotted spoon and reserve.

Grill the brats, turning them, until nice and brown on all sides. Serve with kraut, onions, and mustard.
