Ingredients
  • 8 bratwursts (not pre-cooked)
  • 24 ounces beer (light, dark, German, American, your preference)
  • 2 large onions, quartered and thinly sliced
  • 1 bag sauerkraut, rinsed
  • good medium-hot or hot mustard (Hengstenberg rules, but a good brown mustard will do)
  • buns

Directions
  1. Prick the brats all over with a fork, then put in a large saucepan. Add the beer and the onions. Bring to a boil (it will foam!), then reduce heat and simmer for 30 minutes.
  2. Remove the brats and reserve. Remove the onions with a slotted spoon and reserve.
  3. Grill the brats, turning them, until nice and brown on all sides. Serve with kraut, onions, and mustard.

Oh yes, that's how we do our brats...doesn't get any better!


I have this recipe, but I use a Dark heavy Beer like Guinness Stout. Damn Good on the grill!
