Ingredients
  • 1 cup of self-rising flour
  • 1 cup of self-rising corn meal
  • 1 egg
  • 1 cup of milk; your choice of sweet or buttermilk
  • 1/4 to 2/3 cup of canola oil

Directions
  1. Preheat oven to 375 degrees.
  2. In a medium cast iron skillet add enough canola oil that the bread won't stick and put in the oven as the oven preheats.
  3. In a medium bowl add all of the ingredients together and mix well.
  4. Once the oven has heated, remove the cast iron skillet and pour in the cornbread batter.
  5. Return skillet to the oven and bake for 25 minutes.
  6. If it needs to be browned on the top just broil on low for a few minutes.
