  • CRUST--
  • 1/2 cup confectioners' sugar
  • 1 1/2 cups all-purpose flour
  • 3/4 cup (1 1/2 sticks) butter, softened
  • FILLING-
  • One 8-ounce cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • TOPPING-
  • Strawberries, kiwi slices, blueberries, rasberries (whatever looks good)
  • GLAZE-
  • 1 teaspoon fresh lime juice
  • One 6-ounce can frozen limeade concentrate, thawed (I found Frozen Mojito Mix and it was so good that I'll be using that from now on.)
  • 1/4 cup granulated sugar
  • Whipped Cream, for garnish

Directions
  1. Preheat oven to 350
  2. CRUST-
  3. In a food processor, combine the confectioners' sugar, flour, and butter, and process until the mixture forms a ball.
  4. With your fingers, press the dough into a 12-inch tart pan with a removable bottom. Make sure you press the dough up the sides.
  5. Bake 10-12 minutes until lightly browned.
  6. Set Aside to cool
  7. FILLING
  8. Beat the cream cheese, sugar and vanilla until smooth
  9. Spread over the crust
  10. Cut the strawberries into 1/4-inch slices and arrange around the edge of the crust.
  11. For the next circle, use kiwi slices
  12. Add another circle of strawberries
  13. Fill in any spaces with blueberries
  14. Cluster rasberries in the center of the tart
  15. GLAZE-
  16. Combine limeade (or mojito mix), cornstarch, lime juice, and sugar in a small saucepan for about 2 minutes. Until it thickens.
  17. Let cool
  18. With a pastry brush, glaze the entire tart, you won't juse entire glaze
  19. Keep tart in refrigerator.
  20. Remove abut 15 minutes before serving. Slice into 8 wedges and serve with a dollop of whipped cream.
