Ingredients
  • 20 Ritz crackers, crushed (I like to do this in a zip-lock bag)
  • 3 egg whites
  • 1 cup sugar
  • 1 cup pecans, chopped
  • 1 teaspoon vanilla
  • maraschino cherries (optional)
  • sweetened whip cream or non-dairy topping (optional)

Directions
  1. Preheat oven to 350
  2. Beat egg whites until soft peaks form
  3. Continue beating as you gradually add the vanilla and 1/2 cup sugar
  4. Mix crumbs with 1/2 cup sugar and peacans and fold into egg whites
  5. Bake at 350 for 35 minutes in a well greased pie plate
  6. Serve with sweatened whipped cream or non-dairy topping and cherry on top (if desired)
