Ritz Cracker Pie

- 20 Ritz crackers, crushed (I like to do this in a zip-lock bag) shopping list
- 3 egg whites shopping list
- 1 cup sugar shopping list
- 1 cup pecans, chopped shopping list
- 1 teaspoon vanilla shopping list
- maraschino cherries (optional) shopping list
- sweetened whip cream or non-dairy topping (optional) shopping list
How to make it
- Preheat oven to 350
- Beat egg whites until soft peaks form
- Continue beating as you gradually add the vanilla and 1/2 cup sugar
- Mix crumbs with 1/2 cup sugar and peacans and fold into egg whites
- Bake at 350 for 35 minutes in a well greased pie plate
- Serve with sweatened whipped cream or non-dairy topping and cherry on top (if desired)
