Ritz Cracker Pie

I'm from a small, old-fashioned low-country SC town called Estill. This recipe comes from the Estill cookbook. It's put out by the Estill music and Study Club. The club started in 1913 and they put out the 1st edition of the cookbook in 1948. Read more I know that this sounds crazy but you really need to try it. See less
Ingredients
- 20 Ritz crackers, crushed (I like to do this in a zip-lock bag) shopping list
- 3 egg whites shopping list
- 1 cup sugar shopping list
- 1 cup pecans, chopped shopping list
- 1 teaspoon vanilla shopping list
- maraschino cherries (optional) shopping list
- sweetened whip cream or non-dairy topping (optional) shopping list
How to make it
- Preheat oven to 350
- Beat egg whites until soft peaks form
- Continue beating as you gradually add the vanilla and 1/2 cup sugar
- Mix crumbs with 1/2 cup sugar and peacans and fold into egg whites
- Bake at 350 for 35 minutes in a well greased pie plate
- Serve with sweatened whipped cream or non-dairy topping and cherry on top (if desired)
