I made a gallon of Elderflower wine earlier this year and the must tasted so good I was due to go on holiday so I picked some to dry and this is what I've made now. I have given the measures for both fresh and dried. flowers.

Ingredients
  • 1/2 oz dried flowers OR 3/4 of a pint fresh flowers not pressed down
  • 2 3/4lb sugar- 2 and a bit lb for USA
  • 1/4lb raisins chopped - to add body to the wine
  • 1 campden tab, crushed
  • 2 tea bags, make a strong cup of tea to add to the must
  • 1 gal boiled water
  • -------------------------
  • yeast nutrient
  • yeast
  • if you add the yeast to the boiling water you will kill it

Directions
  1. Add all ing. barring the last 3 to fermenting bin
  2. add boiled water and stir well, make sure the sugar is dissolved
  3. leave overnight in a warm place
  4. the next day add the yeast nutrient and then the yeast
  5. cover fermenting bin and fit airlock
  6. stir daily for 1 week
  7. strain into demijohn,
  8. TAKE SG READING
  9. fit airlock
  10. wrack every 30 days till clear (about 2 or 3 times )
  11. stabilize and bottle
  12. ready in 6 months
