Spinach N Cheese Stuffed Squid Italian Style

- Ingredients: shopping list
- 8 medium squid shopping list
- 1/2 lb boiled spinach shopping list
- 3 eggs shopping list
- Handful home made bread crumb shopping list
- Handful grated parmesan cheese shopping list
- 1 tbsp extra virgin olive oil (lucini or bertoli if you can) shopping list
- Unrefined sea salt shopping list
- Freshly ground white pepper shopping list
- Optional: milk shopping list
- For the sauce: shopping list
- 2 shallots shopping list
- 1 glass dry white wine shopping list
- Pulp of 4 ripe tomatoes shopping list
- 2 Leaves of parsley shopping list
- Kosher sea salt shopping list
- Freshly ground white pepper shopping list
How to make it
- Directions:
- Clean the squid by removing the transparent center bone, the intestines, the head and eyes.
- Cut the sack from the tentacles, and the wings from the sack.
- Wash them carefully.
- Boil the tentacles and wings briefly in boiling water.
- Place the boiled spinach in a bowl, mince, and add the grated bread crumb, eggs, the minced tentacles, Parmesan cheese, salt and pepper and some olive oil. If it is too dry add a little milk to soften it.
- Stuff the squid sacks with this filling and close them with toothpicks.
- In a thick bottomed pan, brown the sliced shallots and then brown the squid.
- Wet with white wine, evaporate, add the tomato pulp and parsley and cook for 30 minutes adding some hot water or vegetable stock if necessary.
- Season for salt and pepper.
- Cool to room temperature and serve sliced in their juice in individual plates.

I must admit, I've never been able to handle a squid successfully. But this is a good reason to try again. Did you know that the world's largest invertebrate is the giant squid???? So there!

We have been going to the Chinese market in Kansas City to pick up squid. and no they will not clean them for us. So I am becoming quite adept at cleaning them. Will have to try this one. Thank you for posting it.
