Kinda stole the idea from Cook Yourself Thin, but it isn't exact to how they made theirs. See, I didn't have the normal things to make pesto with for one and secondly my tomatoes were yucky...so I left out the toms and created my own pesto with what... More

Ingredients
  • 1 large eggplants
  • 1/2 a lemon (juiced)
  • 1/4c balsamic vinegar
  • extra virgin olive oil
  • moz. cheese (cut into slices)
  • about 1/4c pecorino romano cheese
  • big handful of fresh basil (washed)
  • palm full of almonds (ground)
  • salt & pepper
  • garlic powder

Directions
  1. Turn on your broiler
  2. Slice eggplant into 1/2" slices
  3. put on sheet pan
  4. mix balsamic with lemon juice, a shake of evoo and some s&p
  5. "paint" one side of the eggplant with mixture and broil about 10 minutes (turning over once) until soft (but not charred)
  6. While eggplant is cooking make the "pesto"
  7. place pecorino, basil, and almonds in processer and pulse add s&p and garlic powder to taste, blend in evoo until it makes a thick paste
  8. When eggplant is done remove from broiler and start to stack
  9. 1st put down larger pieces of eggplant then some pesto followed by moz. slice and repeat ending with a piece of cheese.
  10. broil or bake the stack just until cheese is melted.
  11. Eat with a salad or a bit of pasta. Enjoy!!!!!
