Mango Raisin Couscous

- 1 cup coucous shopping list
- 1 mango, peeled, pitted, and cut into 1 inch cubes shopping list
- 1 jalapeno chili, seeded and ribs removed, finely chopped shopping list
- 1/2 cup raisins shopping list
- 1 ripe tomato, chopped shopping list
- 2 tbsp. olive oil shopping list
- 1 garlic clove, minced shopping list
- 1/4 cup loosely packed small cilantro sprigs, chopped (be careful not to add to much, to much cilantro will give it a soapy taste) shopping list
- 1/4 cup loosly packed small parsley sprigs, chopped shopping list
- juice of 1 lime shopping list
- salt to taste shopping list
How to make it
- Cook coucous according to package. Drain and set aside.
- Over high heat, in a lrg. saute pan, heat 1 tbsp. of olive oil. Add garlic, jalapeno, and mango. Saute until mango begins to color lightly (it will be similar to a peach). Stir in remaining tbsp. of olive oil, the coucous, tomato, lime juice, raisins, cilantro, and parsley. Toss to heat through, season with salt to taste and serve. Can be served at room temp.
