How to make it

  • Cook coucous according to package. Drain and set aside.
  • Over high heat, in a lrg. saute pan, heat 1 tbsp. of olive oil. Add garlic, jalapeno, and mango. Saute until mango begins to color lightly (it will be similar to a peach). Stir in remaining tbsp. of olive oil, the coucous, tomato, lime juice, raisins, cilantro, and parsley. Toss to heat through, season with salt to taste and serve. Can be served at room temp.
