Eggplant Pockets

- 3 eggplants, trimmed and peeled then cut into 1/2 inch circles shopping list
- 3 tbsp. rice wine vinegar shopping list
- 3 tbls. soy sauce shopping list
- 3 tbls. peanut butter shopping list
- 1 tbls. ginger, peeled and grated shopping list
- 1 tbls. peanut oil shopping list
- 1/2 tsp. crushed red pepper shopping list
- 1 1/2 cups baby spinach shopping list
- 6 pita pockets, warmed shopping list
- 1/2 cup parsley or cilantro, chopped shopping list
- 1/4 cup peanuts, chopped shopping list
How to make it
- In mixing bowl, add vinegar and soy sauce and blend
- Divide mixture between two small bowls
- In one bowl, add peanut butter and blend
- In other bowl, stir in ginger, peanut oil and crushed red pepper
- Brush ginger mixture onto both sides of eggplant
- Grill over medium heat until slightly charred and tender, basting with ginger mixture
- Add spinach and eggplant to pita pocket
- Add parsley and peanuts
- Drizzle with peanut butter mixture
