How to make it

  • In mixing bowl, add vinegar and soy sauce and blend
  • Divide mixture between two small bowls
  • In one bowl, add peanut butter and blend
  • In other bowl, stir in ginger, peanut oil and crushed red pepper
  • Brush ginger mixture onto both sides of eggplant
  • Grill over medium heat until slightly charred and tender, basting with ginger mixture
  • Add spinach and eggplant to pita pocket
  • Add parsley and peanuts
  • Drizzle with peanut butter mixture
