DILLED OLIVE SALAD

- 2 medium tomatoes, cut into bite-size wedges shopping list
- 1 small cucumber, thinly sliced shopping list
- 1 small onion, cut in half, thinly sliced shopping list
- 1/2 cup green olives with pimentos;chopped shopping list
- vinaigrette (recipe follows) shopping list
- 4 ounces mozzarella cheese, in 1/2-inch cubes shopping list
- vinaigrette shopping list
- 1/4 cup olive oil shopping list
- 2 tablespoons vinegar shopping list
- 2 tbsp chopped fresh dill OR 1 teaspoon dried dill shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon sugar shopping list
- 1/4 teaspoon pepper shopping list
How to make it
- For Salad:
- Place tomatoes, cucumber, onion and olives in large serving bowl;
- toss lightly.
- Pour Vinaigrette over salad; toss well.
- Refrigerate at least 4 hours to blend flavors
- Stir cheese in just before serving.
- For Vinaigrette:
- Whisk together oil, vinegar, dill, salt, sugar and pepper in small bowl.

I make a tomato/onion/cucumber salad quite often, but never thought of adding olives and mozzarella to it. Sounds great, will give it a try!
