How to make it

  • Juice one half of the lemon, adding to cavity of chicken
  • add in lemon zest, garlic and 3 tbsp fresh oregano (2 tbsp dried oregano)
  • juice the other half of the lemon and reserve juice
  • place both halves of the lemon inside the cavity of the chicken
  • string together legs and wings so that the wings rest on the under side of the chicken and the legs close the cavity
  • rub down chicken with the olive oil, butter, and lemon juice
  • sprinkle with remaining oregano, salt and pepper (go easy on the salt!!! you don't want it to take over the other flavors)
  • Bake at 375F in a large roasting dish for 20 minutes each pound plus an additional 20 minutes. so if it's a five pound chicken it would bake for 2 hours! 5x20+20=120
  • make sure to baste a few times throughout baking process
  • after removing from the oven let sit in a warm place for 15 minutes to let juices settle
  • NOTE: the first hour i placed foil over the chicken to keep from over browning, after that...let it run nude in your oven

    Sounds really good, and I happen to have 2 organic chickens in my fridge. Like Val, I've stuffed it with rosemary, but never oregano. Will have to try. ;')
