Easy Oregano Roast Chicken Recipe
Very easy and very moist!! I found out that if you can rub something, then you can make a roast chicken!

Ingredients
  • 1 whole chicken, cleaned
  • 1/2 tsp lemon zest
  • 1 lemon (cut in half)
  • 1-2 carlic cloves, minced or 1 tsp prepared garlic
  • 4 tbsp fresh oregano (if you have dried oregano, reduce to 3 tbsp)
  • 4 tbsp olive oil
  • 2 tbsp unsalted butter, softened (do not use margarine!!!)
  • salt and pepper
  • baking string or thick cotton thread

Directions
  1. juice one half of the lemon, adding to cavity of chicken
  2. add in lemon zest, garlic and 3 tbsp fresh oregano (2 tbsp dried oregano)
  3. juice the other half of the lemon and reserve juice
  4. place both halves of the lemon inside the cavity of the chicken
  5. string together legs and wings so that the wings rest on the under side of the chicken and the legs close the cavity
  6. rub down chicken with the olive oil, butter, and lemon juice
  7. sprinkle with remaining oregano, salt and pepper (go easy on the salt!!! you don't want it to take over the other flavors)
  8. Bake at 375F in a large roasting dish for 20 minutes each pound plus an additional 20 minutes. so if it's a five pound chicken it would bake for 2 hours! 5x20+20=120
  9. make sure to baste a few times throughout baking process
  10. after removing from the oven let sit in a warm place for 15 minutes to let juices settle
  11. NOTE: the first hour i placed foil over the chicken to keep from over browning, after that...let it run nude in your oven

Great post - I do something similar except I use rosemary instead of oregano. I will try it your way next time! Thanks for the post!


Sounds really good, and I happen to have 2 organic chickens in my fridge. Like Val, I've stuffed it with rosemary, but never oregano. Will have to try. ;')
