How to make it

  • Combine gelatin, 2/3 cup sugar, salt and ginger.
  • Beat egg yolks and tangerine juice.
  • Stir into gelatin mixture.
  • Place over low heat, stir until gelating dissolves and mixture thickens.
  • Remove from heat.
  • Stir in lemon juice and rind.
  • Chill until mixture mounds slightly when dropped from a spoon.
  • Prepare souffle dish by making a collar with foil that extends two inches above rim of the dish.
  • Fasten with tape.
  • Beat whites until soft peaks form.
  • Gradually beat in remaining 2/3 cup of sugar.
  • Beat until stiff peaks form.
  • Fold into tangerine mixture.
  • Pour into prepared dish.
  • Chill at least one hour.
  • While it chills make glazed tangerine slices
  • Combine 2 cups of sugar with 2/3 cup of water
  • Stir until dissolved and bring to a boil.
  • Simmer 20 minutes.
  • Remove from heat, add 1/4 cup of Grand Marnier.
  • Add tangerine sections and candied ginger.
  • Cover and let stand 20 minutes.
  • Stir occasionally to baste the sections.
  • On individual dessert plates, pool a few pieces of candied tangerine.
  • Top with chilled tangerine mousse/souffle.
  • Sprinkle with powdered sugar and mint leaves.
