Port Elizabeth Scones

- 2 c flour shopping list
- 2/3 c butter shopping list
- 1 tbsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1/4 c sugar shopping list
- 2/3 c slightly beaten eggs shopping list
- 1/2 c grated jack cheese shopping list
- 1/2 c apricot jam shopping list
- butter to spread on scones shopping list
How to make it
- Cut 2/3 c butter into flour, baking powder, sugar, and salt.
- Add eggs.
- Mixture will be moist.
- Knead lightly-10-12 times.
- Pat out into a rectangle1 inch thick on lightly floured surface
- Cut into 2 inch circles with cutter
- Bake on greased baking sheet at 425degrees for about 15 minutes until golden brown.
- Split open while still hot.
- Butter each half and then spread with jam.
- Top each half next with cheese and serve warm.
- Makes about 12 halves.
