Chocolate Coconut Rum Cake

- 4 oz. semi-sweet chocolate, roughly cut shopping list
- 1/4 cup coffee shopping list
- 3/4 lb. (3 sticks) unsalted butter, cut into small pieces shopping list
- 2 cups sugar shopping list
- 3 lg. eggs shopping list
- 1/4 cup coconut rum shopping list
- 2 cups all-purpose flour shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. vanilla shopping list
- 1 tsp. ground cinnamon shopping list
- 1/2 tsp. baking soda shopping list
- 1/2 cup buttermilk shopping list
- 1/8 tsp. ground cloves shopping list
- cinnamon Whipped Cream: 1/4 cup confectioner's powder sugar shopping list
- 1 cup heavy cream shopping list
- 1 tsp. vanilla shopping list
- 1 tsp. ground cinnamon shopping list
- 2 tbsp. coconut rum shopping list
How to make it
- Preheat oven to 350 degrees F. Grease and flour 2-8 inch cake pans.
- In a double boiler combine, chocolate and butter until melted, stirring frequently.
- Remove chocolate and butter mix from heat . Stir in coconut rum, coffee, and sugar until sugar dissolves.
- Transfer to a lg. bowl, beat in eggs. Then stir in flour, cloves, cinnamon, baking soda, and baking powder.
- Add buttermilk and vanilla and mix well. Transfer to pans.
- Bake until toothpick inserted into cake comes out clean or about 30 min. Remove and cool about 2 hrs. Serve with cinnamon whipped cream or butter cream icing.
