MAPLE GLAZED SQUASH

- 1 Lg. acorn squash, seeded and cut into quarters shopping list
- butter flavored vegetable cooking spray shopping list
- 1 Lg. Tart cooking apple, unpeeled, cored, and sliced shopping list
- ¼ cup raisins shopping list
- ¼ cup chopped walnuts shopping list
- ½ hot water shopping list
- Maple Flavored Syrup: shopping list

- 1 cup apple juice shopping list
- 2 ½ tsp. cornstarch shopping list
- ¼ cup sugar substitute shopping list
- 1 Tbs. margarine shopping list
- 1 tsp. maple extract shopping list
- 1 tsp. vanilla extract shopping list

How to make it
- 1)Place squash, cut sides up, in baking pan; Add ½ cup hot water. Bake in preheated oven at 400º until squash is tender about 30 to 40 minutes.
- 2)Prepare the maple glaze first:
- 3)Mix apple juice, cornstarch and the sugar substitute in a small saucepan; heat to boiling. Boil, stirring constantly, until thickened, about 1 minute.
- 4)Remove from heat; add margarine, maple extract and vanilla extract, stirring until margarine is melted.
- 5)The Squash recipe:
- 6)Spray medium skillet with cooking spray; heat over medium heat until hot. Add apples, raisins and walnuts; cook over medium heat until apple slices are tender, about 5 minutes. Add maple flavored syrup; cook until heated through, 2 to 3 minutes.
- 7)Place squash wedges on a serving platter; spoon apple mixture over squash. Serve.
