carrot and coconut cake

- 150ml sunflower oil shopping list
- 100g brown sugar shopping list
- 3 eggs shopping list
- 75g golden syrup shopping list
- 175g wholemeal flour shopping list
- 1tsp cinammon shopping list
- 1/2 tsp all spice shopping list
- 1/2 tsp ginger shopping list
- 1tsp baking soda shopping list
- 2 tsp baking powder shopping list
- 200g carrots grated shopping list
- 75g sultanas shopping list
- 100g coconut shredded shopping list
- 100g pineapple chopped shopping list
- icing shopping list
- 3 tbsp orange marmalade shopping list
- 150g cream cheese shopping list
- 50ml coconut cream shopping list
- 50g icing sugar shopping list
How to make it
- mix together oil, sugar, eggs and syrup until creamy
- add everything else and mix thoroughly
- bake for 45 minutes at a medium heat.
- ICING
- Warm marmalade until liquid remove from heat
- add cream cheese, coconut cream and sugar and mix thoroughly. Place in fridge until at the right consistency for spreading.
- Spread over cooled cake.
- Eat cake. (You probably won't want to share...)
