Baked Mediterranean Eggs With Arugula And Yoghurt

- 8 ozs wild arugula --or substitute spinach but its not peppery like arugula . shopping list
- 1/2 cup water shopping list
- 2 tbsp olive oil shopping list
- 4 organic or free-ranged eggs shopping list
- 5 ozs Greek-style or natural yoghurt shopping list
- 1 fat garlic clove ,crushed shopping list
- 2 tbsp unsalted butter shopping list
- 1/2 tsp chilli flakes shopping list
- 1/2 tsp sweet paprika shopping list
- 6 sage leaves shopping list
- sea salt shopping list
How to make it
- Preheat the oven to 300 F .
- Rinse the arugula and place in an oven-proof frying pan with the oil ,water ,and a little salt
- Cook over medium heat for 5 minutes or so until most of the liquid has evaporated
- Make 4 indentations in the arugula and crack in the eggs
- Bake in the oven for 10 to 15 minutes until the egg whites set.
- Meanwhile combine the yoghurt with the garlic and salt to taste and leave at room temperature
- Melt the butter in a small pan and add the chilli flakes and paprika and cook until the butter foams
- Add the sage and cook a few seconds longer ,and remove from heat
- To serve,spoon the egg and arugula on to thick , toasted and buttered sourdough bread .
- Pour the hot chilli butter over the yoghurt and eggs .
- Maybe a side serve of best bacon or some smoked salmon.
