How to make it

  • Preheat the oven to 300 F .
  • Rinse the arugula and place in an oven-proof frying pan with the oil ,water ,and a little salt
  • Cook over medium heat for 5 minutes or so until most of the liquid has evaporated
  • Make 4 indentations in the arugula and crack in the eggs
  • Bake in the oven for 10 to 15 minutes until the egg whites set.
  • Meanwhile combine the yoghurt with the garlic and salt to taste and leave at room temperature
  • Melt the butter in a small pan and add the chilli flakes and paprika and cook until the butter foams
  • Add the sage and cook a few seconds longer ,and remove from heat
  • To serve,spoon the egg and arugula on to thick , toasted and buttered sourdough bread .
  • Pour the hot chilli butter over the yoghurt and eggs .
  • Maybe a side serve of best bacon or some smoked salmon.
