Mango Peanut Sambal

- 2 mangoes, peeled, pitted, and diced. shopping list
- 1/4 cup peanuts shopping list
- 1 med. red onion, finely diced shopping list
- One 2-inch piece ginger, peeled and grated shopping list
- 2 garlic cloves, minced shopping list
- 2 bird's eye chilies, seeded and ribs removed, finely chop shopping list
- 1/4 cup peanut oil shopping list
- 1/2 tsp. chili powder shopping list
- 2 mint sprigs, leaves only, chopped shopping list
- 1 tsp. Asian sesame oil shopping list
- 2 tsp sesame seeds shopping list
How to make it
- In a med. saute pan over med. heat, heat the peanut oil.
- Add garlic and onion; saute until onion is translucent, about 5 min.
- Add peanuts, chilies, chili powder, ginger, and peanuts; saute until peanuts are golden brown, about 5 min.
- Remove from heat and cool.
- In a bowl combine peanut mixture and stir in mangoes, sesame seeds, sesame oil, and mint.
- Store in refrigerator for up to 4 days.
