Indian Leather Britches Beans Recipe
This recipe came from my husbands grand mother. Great for stews or by their self.

Ingredients
  • Young tender Green Beans (at least 3 pounds)
  • 1/4 pound slab of pork

Directions
  1. Snap tips of green beans off.
  2. Tie a knot on the end of a heavy sting, thread green beans with a heavy gauge needle (like long strings of beads).
  3. Hang beans indoors in a sunny dry place until thoroughly dry. This may take up to two months. (check on beans periodically for fungus or mold; remove any bad beans from string).
  4. When dry store in a container until ready to use.
  5. To use beans: Wash beans and soak 2 cups dried beans in 2 cups of water for an hour.
  6. Add 1/4 lb. slab pork, salt, and pepper.
  7. Bring to a boil and reduce heat. Stir, simmer for about 3 hours or until beans are tender. Add water as needed to keep beans from burning.
