How to make it

  • Preheat oven to 350
  • Cast Iron skillet med. heat melt butter & saute onion pepper mix until onions are clear about 10min.
  • In seperate bowl combine muffin mix, eggs, both cans of corn
  • Remove skillet from heat, stir in corn mixture
  • Mix milk and sour cream, then "frost" the top of the corn mixture as best you can
  • Top cheddar cheese then cayenne
  • Cook for 45 to 55 min or until cheese is dark and bubbly.
  • Enjoy!

    This is different from the one I make but this sounds wonderful! I will definitely be making this one but I won't be waiting till Thanksgiving!
