Corn Casserole

- 1 box corn muffin mix shopping list
- 2 eggs shopping list
- 1 can whole kernel corn drained, 1 can cream corn shopping list
- 1 red pepper, 1 green pepper, 1 yellow onion all diced shopping list
- 1 stick butter(not margarine!!!) shopping list
- 8 oz sour cream, 2 T milk shopping list
- Shredded cheddar cheese shopping list
- cayenne pepper shopping list
- cast iron skillet shopping list
How to make it
- Preheat oven to 350
- Cast Iron skillet med. heat melt butter & saute onion pepper mix until onions are clear about 10min.
- In seperate bowl combine muffin mix, eggs, both cans of corn
- Remove skillet from heat, stir in corn mixture
- Mix milk and sour cream, then "frost" the top of the corn mixture as best you can
- Top cheddar cheese then cayenne
- Cook for 45 to 55 min or until cheese is dark and bubbly.
- Enjoy!

This is different from the one I make but this sounds wonderful! I will definitely be making this one but I won't be waiting till Thanksgiving!
