Chicken meatballs cooked in a creamy honey mustard sauce... best served with rice and vegetables.. My family loves this on sunday nights.

Ingredients
  • INGREDIENTS for meatballs.
  • 2 Large chicken breasts minced
  • 2 cloves of garlic minced
  • 3 tsp of grain mustard
  • 1/2tsp of mixed herbs(dried)
  • 3 Large green onions sliced OR 1 small brown onion small dice
  • 1 egg
  • 1/2 cup of dried bread crumbs
  • Salt and pepper for seasoning
  • INGREDIENTS for sauce.
  • 1 cup of chicken stock
  • 1/2 cup of cream
  • 1 Tbsp of grain mustard
  • 1/2 Tbsp of honey
  • Salt and pepper for seasoning.

Directions
  1. In a bowl add chicken mince, garlic, herbs, onions, mustard, egg and breadcrumbs
  2. Mix well
  3. Form into balls about the size of a golf ball
  4. Heat a pan with a little splash of oil on med heat add meatballs
  5. Keep moving the meatballs around to brown all over (You may have to do in a couple of batches)
  6. Remove from pan and keep warm
  7. To make the Sauce:
  8. In same pan add the chicken stock on a med-low
  9. Bring to a light simmer
  10. Add the honey and grain mustard stirring until the honey dissolves
  11. Add in the cream and stir
  12. Add back in the meatballs and simmer on a low heat for 15 mins
  13. Serve with rice and enjoy!!
