How to make it

  • Generously grease with shortening 4 – 5 heat resistant glass custard dishes or large deep cups and set Aside.
  • Beat eggs and milk with mixer - till fluffy and bubbly. About 1 minute
  • Add in 2 tsps of melted butter or margarine and beat another 30 seconds
  • Add dry ingredients all at once and mix only till mixed and bumps are gone.
  • Pour mixture into cups only HALF full.
  • NOTE: They will or should pop over..the cup at completion of baking time so divide batter evenly over all cups..
  • Place all cups on a flat cookie sheet for easier removal from oven when they are done.
  • Cook at 450 degrees for 10 minutes only. Then reduce heat to 350 degrees for another 40 minutes or until they are popped and cooked/browned. You may want to slash center of each popover with a knife and add another 5 minutes to baking for a drier crisper- result.
  • Remove from oven and let cool for a few minutes. Use a butter knife and loosen the sides of the popover from the glass cups and flip out or turn upside down. If it sticks, gently loosen with a knife or spoon.
  • Optional: For flavored popovers, add crushed nuts and cinnamon in cup prior to pouring batter in . Or try bacon and cheese. Flip out of cup and the tops will have the crumbles :)

    Wonderful sounding recipe! I make these and stuff with with ham, eggs and cheese. Impressive and wonderful breakfast treat. Yorkshire Pudding, a version of these is great with Prime Rib!
