Cheddar Beer Soup

- 1 stick butter or margarine shopping list
- 1 large onion diced shopping list
- 1 medium green bell pepper diced shopping list
- 1 large bay leaf shopping list
- 1 whole clove shopping list
- 1/2 cup flour shopping list
- 3/4 cup beer or ale shopping list
- 4 cups chicken stock shopping list
- 1 cup heavy cream shopping list
- salt and pepper to taste shopping list
- 1 block, 8 oz cheddar cheese, grated shopping list
How to make it
- In a stock pot melt butter or margarine and saute onions and peppers with bay leaf and clove until vegetables are soft.
- Add flour and cook and stir for several minutes .
- Mixture will form a paste.
- Gradually add liquids and cook and stir constantly until mixture comes to a boil and thickens; then simmer about 10 minutes.
- Season with salt and pepper.
- Serve soup hot and sprinkle with the grated cheddar.
- Serves 6 to 8.
