Squash Custard  Cake Recipe
This is more like a squash bread pudding. lt is great warm or cold!

Ingredients
  • 5 medium white summer squash( l've used yellow squash & zuchinni also and it tastes just as good)
  • 4 eggs
  • 2 cups of sugar
  • 1 cup of plain flour
  • 1 stick of melted butter
  • *I've also used 1 cup of biscuit mix instead of the plain flour. It makes it a little more fluffy using the biscuit mix.

Directions
  1. Prepare squash by peeling and removing seeds. (l don't remove them)
  2. Boil in about 1 qt of water until tender
  3. Drain thoroughly in colander
  4. Beat eggs slightly
  5. Add remaining ingredients & squash
  6. Pour into a well greased 3x16x2 pan
  7. Bake 30 mins at 350 degrees
  8. Turn down heat to 250 degrees and bake another 30 mins until slightly brown on top.
