Blackening Spices For Tuna Fish Pork Chicken Recipe
This recipe came off a Smithfield package as a spice mixture for pork chops. I've been using it for years on tuna, catfish, pork chops, chicken, anything that is worth blackening. It's the best I've found

Ingredients
  • Dry ingredients:
  • 1 Tb paprika
  • 1 tsp seasoned salt
  • 1 ts sage
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Oils for application to fish/meats:
  • 2 Tb butter

Directions
  1. Mix the dry ingredients before individual use, or, in some multiple if bulk storage is preferred.
  2. To use, microwave a couple of tablespoons of butter in a paper plate until soft. Brush on the outer surface of the meat/fish to be blackened.
  3. Spread the spice mixture on another disposable surface, such as wax paper or a paper plate. Press the buttered meat/fish in the spices until fully coated.
  4. Heat a cast iron skillet until it is extremely hot. Apply the meat/fish.

I love blackened prime rib! I bet this would work on any meat. Great post Rottman!


It probably would. But, you blacken prime rib???


Sounds terrific. Do you think smoked paprika would add or detract from the flavor? 5 forks.

If you try it with smoked paprika, let me know how it tastes. For me, that would be a dramatic departure in flavors. But I guess that's how a lot of really great recipes get started ;-)

This blend of spices is not a hot tasting mixture. If you prefer, you can liven it up a bit by doubling the red peppers.
