How to make it

  • From 1 to 2 limes grate 2 tsp. peel and squeeze 3 Tbs juice.
  • Cut remaining lime into wedges. In small bowl,combine peep,oil,cumin,garlic and 1/2 tsp salt;rub on both sides of pork slices.
  • Spray large ridged grill pan with non-stick cooking spray;heat on med. until hot. Cook pork 11 to 14 mins or till lightly browned on outside and still slightly pink in center,turning once.
  • Combine beans,jicama,lime juice,cilantro and 1/4 tsp each salt and fresh ground pepper. Serve pork with salad and lime wedges.
