Cuban Grilled Pork

- 2 to 3 limes shopping list
- 1 tsp olive oil shopping list
- 1 tsp cumin shopping list
- 1 clove garlic,crushed with press shopping list
- 1 pork tenderloin (1-1/4 lbs),cut crosswise into 8 slices (each flattened slightly) shopping list
- 1 can (15 to 19 oz) black beans,rinsed and drained shopping list
- 3 c chopped jicama (1lb) shopping list
- 1/4 c loosely packed fresh cilantro leaves,chopped shopping list
How to make it
- From 1 to 2 limes grate 2 tsp. peel and squeeze 3 Tbs juice.
- Cut remaining lime into wedges. In small bowl,combine peep,oil,cumin,garlic and 1/2 tsp salt;rub on both sides of pork slices.
- Spray large ridged grill pan with non-stick cooking spray;heat on med. until hot. Cook pork 11 to 14 mins or till lightly browned on outside and still slightly pink in center,turning once.
- Combine beans,jicama,lime juice,cilantro and 1/4 tsp each salt and fresh ground pepper. Serve pork with salad and lime wedges.
