Lemon Parmesan Tilapia Recipe
One bite of these delectable pan-sauteed fillets jazzed up with a crispy coating of parmesan,lemon zest and peppercorns will turn a non-fis person into a fish lover. From Woman's World

  • 2 egg whites
  • 1/2 c grated parmesan cheese
  • 2 Tb flour
  • 2 Tb chopped parsley
  • 1-1/2 tsp McCormick Cracked Peppercorn Herb Roasting Rub
  • 1-1/2 tsp grated lemon zest
  • 4 tilapia fillets (1-1/4 lbs)

Directions
  1. Beat egg whites in shallow dish;reserve . Combine parmesan,flour,parsley,peppercornrub,and zest;spread on wax paper. Dip each fillet in egg,then in parmesan mixture,turning to coat completely.
  2. In large non-stick skillet,heat 2 tsp oil over med. heat. Add 2 fillets;cook turning once until opaque and lightly browned,about 3 mins. per side Remove to serving platter. Repeat with remaining oil and fillets. If desired,garnish with lemon and rosemary.
  3. Note: For a changee,serve halved fillets on a soft bun with tarter sauce,sliced tomato and lettuce leaves.
