How to make it

  • Beat egg whites in shallow dish;reserve . Combine parmesan,flour,parsley,peppercornrub,and zest;spread on wax paper. Dip each fillet in egg,then in parmesan mixture,turning to coat completely.
  • In large non-stick skillet,heat 2 tsp oil over med. heat. Add 2 fillets;cook turning once until opaque and lightly browned,about 3 mins. per side Remove to serving platter. Repeat with remaining oil and fillets. If desired,garnish with lemon and rosemary.
  • Note: For a changee,serve halved fillets on a soft bun with tarter sauce,sliced tomato and lettuce leaves.
