This is an easy appetizer to put together, & makes an impressive brunch or dinner party dish.

Ingredients
  • 4 eggs
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 3 tomatoes -- diced
  • 1 tablespoon rosemary
  • salt and pepper
  • 1/2 cup bread crumbs
  • 4 slices prosciutto

Directions
  1. Preheat oven to 350F.
  2. Beat eggs & combine with ricotta, Parmesan, diced tomatoes, rosemary, salt and pepper.
  3. Spray a 12 cup muffin pan with nonstick cooking spray and sprinkle each muffin cup with breadcrumbs.
  4. Pour egg mixture into muffin cups and top with prosciutto shaped as a flower/rose. Bake 15 minutes. Serve warm. Garnish with fresh basil, if desired.
  5. For the prosciutto roses - thinly slice prosciutto, start at the center & keep wrapping around to achieve a flower/rose shape.
