  • About 4 or 5 large potatoes
  • Carrots - approx 1kg (or 6-8 depending on size)
  • 1 large or 2 small onion(s)
  • 1 large Can of Corned Beef.

Directions
  1. Slice the potatoes, carrots and onion. This is way easier and a lot faster if you have one on those V-Slicer thingies.
  2. Roughly slice the corned beef so it will be easier to break up later.
  3. Layer the ingredients, in a casserole-type pan, starting with a layer of potato. When it comes to the Corned Beef layer, crumble it up to spread it out. I prefer the order to be potato, carrot, onion, corned beef...but that's just me...
  4. Repeat, so you have two full layers of each ingredient, and finish with a layer of potato.
  5. Pour water into the pan up to about one third the way up the layers.
  6. Top with ground black pepper, put the lid on and place on the stove over medium heat.
  7. Once the water is bubbling, turn down and simmer for approx 40-45mins, until potatoes are tender. Check with a skewer or knife from time to time as the cooking time varies quite a bit depending on the thickness of your slices and the size of your pan.
  8. Serve with fresh crusty bread and butter.
  9. Note: Although this dish isn't really seasoned or spiced, it is incredibly tasty......good old English comfort food. Please try it !
