Grilled Eggplant Alfredo Cassorole

- olive oil spray shopping list
- 2 large eggplant;peel&slice shopping list
- 3 large ripe tomatoes(in season is available)sliced shopping list
- 1 sweet red pepper sliced shopping list
- 1 4 ounce can mushrooms drained shopping list
- 1 jar light alfredo sauce shopping list
- 1 teaspoon garlic powder shopping list
- Fresh black pepper& kosher salt to taste shopping list
- 6 ounces of cooked ORZO (pasta) shopping list
- 10 0zs. grated Fontina cheese shopping list
How to make it
- I use an INDOOR Grill year-round
- Grill eggplant slices on sprayed grill
- Grill pepper slices
- Set aside
- In a cassorole dish line the eggplant slices on bottom
- Place grilled pepper slices on top
- Place tomatoe slices on the other veg.
- SPRINKLE GARLIC POWDER AND SALT AND PEPPER
- Cover with Orzo pasta
- Poor on Alfredo Sauce to cover
- Place mushrooms on the sauce
- Cover completely with the shredded Fontia cheese.
- Bake at 400 degrees about 30 minutes till cheese is melted
- Remove from oven to cool for about 15 minutes,then slice
- Serve with warm rolls and a salad.
