Grilled Eggplant Alfredo Cassorole Recipe
Grilled eggpant ,fresh tomatoes,creamy sauce,covered with rich cheese,and tiny pasta,what could be better/

Ingredients
  • Olive oil spray
  • 2 large eggplant;peel&slice
  • 3 large ripe tomatoes(in season is available)sliced
  • 1 sweet red pepper sliced
  • 1 4 ounce can mushrooms drained
  • 1 jar light alfredo sauce
  • 1 teaspoon garlic powder
  • Fresh black pepper& Kosher salt to taste
  • 6 ounces of cooked ORZO (pasta)
  • 10 0zs. grated Fontina cheese

Directions
  1. I use an INDOOR Grill year-round
  2. Grill eggplant slices on sprayed grill
  3. Grill pepper slices
  4. Set aside
  5. In a cassorole dish line the eggplant slices on bottom
  6. Place grilled pepper slices on top
  7. Place tomatoe slices on the other veg.
  8. SPRINKLE GARLIC POWDER AND SALT AND PEPPER
  9. Cover with Orzo pasta
  10. Poor on Alfredo Sauce to cover
  11. Place mushrooms on the sauce
  12. Cover completely with the shredded Fontia cheese.
  13. Bake at 400 degrees about 30 minutes till cheese is melted
  14. Remove from oven to cool for about 15 minutes,then slice
  15. Serve with warm rolls and a salad.
