Ingredients
  • 2 boxes of jiffy cornbread mix
  • add 2 eggs/ milk
  • 1/2 to 2/3 cups shredded cheese do not go over that you don't want it real cheesy ...
  • 1 small white / yellow onion cut up small...fine chopped.
  • 4 to 6 green onion stalks cut up small
  • 1/2 teaspoon of garlic
  • 8 slices of japaleno peppers cut up fine
  • 1/4 cup or less of parsley
  • 1 Tablespoon of slap yo mama seasoning or your favorite
  • stir up and bake as directed on box.
  • now the sauce for the dressing. you will add this to the cornbread after it is cooked.
  • 3 or 4 lbs of shrimp
  • 1/2 tablespoon to 1 full tablespoon Slap yo mama...
  • start with the 1/2 after it is cooking if you feel you need more
  • put the other 1/2 tablespoon.
  • 2 cans of Campbells Shrimp soup
  • 1 med yellow/white onions cut fine
  • 4 to 6 green onions
  • 1/2 teaspoon garlic
  • 8 slices of japaleno peppers chopped fine
  • 1/4 cup or less of parsley
  • 1/2 stick of butter
  • 2 tablespoons of olive oil /if you don't have u can use reg.cooking oil.

Directions
  1. now...
  2. use a magnalite pot /NOT a case iron...
  3. put the oil in the pot med heat
  4. add all onions/ green and yellow or white / japaleno/ garlic/
  5. saute' until clear...then add:
  6. one can of Shrimp soup
  7. saute' around then add a 1/2 can of water..
  8. if you got it to thin or not enough mixture for the cornbread
  9. add the 2 can of shrimp soup.
  10. turning down your heat just
  11. let it simmer for about 20 minutes
  12. then add your shrimp.
  13. by the time all of this is done your corn bread is cooked
  14. add the cornbread into the shrimp mixture
  15. mix well together
  16. then pour over into a oiled baking dish and bake
  17. until top is brown or for about 25 minutes.
  18. the sauce that I told you how to make
  19. you will make it again for your rice and to pour over
  20. your cornbread when it is done..
  21. you can double the recipe by using 4 cans of shrimp soup
  22. and extra shrimp ...or crawfish..
  23. this is the same recipe i cook my crawfish..
  24. except
  25. small chopped fine of bell pepper
  26. you will need to use about 3 lbs of shrimp or crawfish
  27. it takes a tleast one pound for the dressing and the other
  28. for your sauce to eat on rice
