Baked Gnocchi

- 1 pkg (about 17 oz.) frozen or vacuum packed gnocchi shopping list
- 1/3 c olive oil shopping list
- 3 cloves garlic,minced shopping list
- 1 pkg. (10oz.) frozen spinach,thawed and squeezed dry shopping list
- 1 can (about 14 oz.)diced tomatoes shopping list
- 1 tsp italian seasoning shopping list
- salt and black pepper shopping list
- 1/2 c grated parmesan cheese shopping list
- 1/2 c (2oz) shredded mozzarella cheese shopping list
How to make it
- Preheat oven to 350 degrees. Grease large casserole or gratin dish.
- Cook gnocchi according to directions. Drain;set aside.
- Meanwhile,heat oil in large skillet or Dutch oven over med. heat. Add garlic;cook and stir 30 seconds. Stir in spinach. Cook,covered,2 mins or till spinach wilts. Add tomatoes and Italian seasoning.
- Season with salt and pepper;cook and stir about 5 mins. Add gnocchi to spinach mixture in skillet;stir gently.
- Transfer gnocchi mixture to prepared casserole. Sprinkle with Parmesan and mozzarella cheeses. Bake 20-30 mins until caserole is bubbly and cheese melted.
