Ingredients

How to make it

  • Heat oil in a stockpot.
  • Add onion, celery and carrot, cook until onion is beginning to brown, stirring.
  • Add zucchini, garlic, salt and pepper and stir until fragrant, no longer or it will burn.
  • Add tomato paste and stir to coat vegetables and lightly cook.
  • Pour in diced tomatoes, broth, water, red wine if using, green beans and the diced potato. Bring to a boil.
  • Reduce heat and simmer, covered, 20 minutes.
  • Add beans, pasta, and cheese (if using).
  • Continue simmering (uncovered this time) until pasta is cooked, about 10 minutes.
  • Stir in fresh basil to taste immediately before serving.

    Hello! You know, I was thinking about you and had to stop in and say hello. I used to visit your site all the time then got busy with college and now this is like coming back to an old friend =). What a great recipe you posted! All I can think of is how I need to make anothe batch of homemade chicken broth for the freezer and make this soup at the same time. YUM!, Shandy
