Jewels Corn Pudding Recipe
Given to me by a dear friend this recipe is absolutely delicious. I love the flavor the peppers give this cakey style pudding.

Ingredients
  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) sweet corn, drained
  • 2 eggs, beaten
  • 1 green pepper, diced
  • 1 onion, diced
  • 2 cups cracker crumbs (saltines or any cream cracker) -I guess Ritz would be good too, but I've never tried it with them.
  • 1 dash milk
  • 1/4-1/2 cup butter
  • salt & pepper to taste

Directions
  1. Mix first 6 ingredients into a casserole consistency.
  2. Salt & pepper to taste.
  3. Use milk to loosen as much as needed.
  4. Pour into baking dish and pat top with butter.
  5. Bake in a 350 degree oven uncovered for 1 hour.

This sounds like a wonderful corn pudding - it's a bit different from mine, but I think this one sounds even better! Will definitely keep this!
