How to make it

  • Combine first 6 ingredients in a small bowl; stirring well.
  • Brush both sides of each chicken breast half with mustard; dredge in breadcrumbs mixture.
  • Heat olive oil and butter in a non stick skillet over medium high heat until butter melts.
  • Add chicken breasts, and saute 6 to 8 minutes on each side or until chicken is done.

Well I tried this recipe and it didnt work for me. There wasnt nearly enough dijon sauce to coat two breats. I also found it wasnt enough oil nor was the breading enough to coat two breast of chicken. The cooking time left the chicken not thoroughly cooked. Sorry to say, I wont be using this one again :( I may take some of the spices and make a similar creation and bake it vs frying. Thanks

I made this for my boyfriend and myself tonight. I used instant mashed potatoes instead of breadcrumbs, extra Italian seasoning instead of thyme, and double the olive oil instead of butter, (to make up for things we didn't have) but it was still very good. The outside blackened quickly, keeping the juices inside, for some of the most tender, delicious chicken breast I've ever had. After he sliced the black parts off, my boyfriend agreed. I would definitely make this again.

It took a couple of tries, but this turned out to be the tastiest and juiciest chicken I've ever made. I used some real Dijon mustard my daughter brought back from France, and my own Italian seasoning mixture.

This sounds pretty good. My husband only recently started eating chicken again (long story), and I'm looking for something easy and mild-tasting. I'll have to try this one, soon.
