How to make it

  • In a large casserole with a cover
  • Fry 1 lb. mild or hot sausage, break up into walnut-sized lumps as cooking, take up onto a plate.
  • Saute 2 medium onions chopt in grease
  • add 1 C washed rice and saute 1 minute
  • Add 1 C water and 1 tsp salt to onions and rice, bring to a boil
  • Add the sausage
  • Clean 1 acorn or butternut squash
  • Cut squash into eight pieces, arrange around top of rice.
  • Cover and bake 90 min at 350°F.
  • Add some brussels sprouts 15 minutes before done or serve with green peas.

    If the nutrients on white rice are the only thing standing between you and death, by all means don't rinse.

    If you are sincere about the nutrients, save the rinse waters, all six of them, to make soup.

    I've always washed my rice or it comes out sticky from all the starch. This looks wonderful.

    Rinsing rice takes away the nutrients and unless you are using imported rice or short-grain, it should not be rinsed. Today's modern rice processers have made that step unncessary for long-grain. And if you are using converted rice like Uncle Ben's, you should never wash.
