No-tuna Salad Recipe

Ingredients

Salad:

2 cups organic spelt fusili or penne

1 half orange or yellow bell pepper, diced

1 half medium red onion, diced

1/2 cup frozen corn

1/4 cup sun dried tomatoes, diced

3-4 large leaves lettuce-leaf basil, finely chopped

Dressing:

1 tbsp. frozen orange juice concentrate

3-4 tbsp. veganaise (or other faux-mayo product)

1 tbsp. fresh chives, finely chopped

1/2 tsp. paprika

1/2 tsp. garlic powder

salt and pepper to taste

**please note: amounts of spices will vary depending on your tastes, I highly recommend playing around with the flavour until it suits you!

Directions

Salad:

Boil pasta until it is al dente, be careful not to over-cook. Remove from water and rinse with cold water, set aside.

Dice bell pepper and sun dried tomatoes, set aside.

Cook corn. The easiest way to do this is to put the corn in a microwave safe dish, add enough water to cover the corn, add a pinch of salt, cover with plastic wrap and microwave for 3 minutes on medium heat. Drain and set aside.

Chop basil, set aside.

Dice red onion, saute with olive oil in frying pan until onion is semi-translucent.

Dressing:

Mix all ingredients.

Combine the salad ingredients and the dressing. Toss in a medium sized salad bowl, ensuring the dressing covers all of the pasta mixture. Cover with plastic wrap or a dish towel and place in fridge until cool.
