No-Tuna Salad

- Salad: shopping list
- 2 cups organic spelt fusili or penne shopping list
- 1 half orange or yellow bell pepper, diced shopping list
- 1 half medium red onion, diced shopping list
- 1/2 cup frozen corn shopping list
- 1/4 cup sun dried tomatoes, diced shopping list
- 3-4 large leaves lettuce-leaf basil, finely chopped shopping list
- Dressing: shopping list
- 1 tbsp. frozen orange juice concentrate shopping list
- 3-4 tbsp. veganaise (or other faux-mayo product) shopping list
- 1 tbsp. fresh chives, finely chopped shopping list
- 1/2 tsp. paprika shopping list
- 1/2 tsp. garlic powder shopping list
- salt and pepper to taste shopping list

How to make it
- Salad:
- Boil pasta until it is al dente, be careful not to over-cook. Remove from water and rinse with cold water, set aside.
- Dice bell pepper and sun dried tomatoes, set aside.
- Cook corn. The easiest way to do this is to put the corn in a microwave safe dish, add enough water to cover the corn, add a pinch of salt, cover with plastic wrap and microwave for 3 minutes on medium heat. Drain and set aside.
- Chop basil, set aside.
- Dice red onion, saute with olive oil in frying pan until onion is semi-translucent.
- Dressing:
- Mix all ingredients.
- Combine the salad ingredients and the dressing. Toss in a medium sized salad bowl, ensuring the dressing covers all of the pasta mixture. Cover with plastic wrap or a dish towel and place in fridge until cool.
