Baked Spanish Potato Omelet

- 5 eggs shopping list
- 2 c. peeled, cooked, cubed potatoes shopping list
- 1 onion, finely chopped shopping list
- 1 green pepper, minced shopping list
- 12 green stuffed Spanish olives, slices shopping list
- 1 tsp. salt shopping list
- 4 oz. lean, cooked ham, cubed (see directions) shopping list
How to make it
- Beat eggs until fluffy as can get, Fold in remaining ingredients. Spray a round, non-stick cake pan with cooking spray for no-fat frying. Spoon in omelet mixture.Bake at 350 degrees for 25 to 30 minutes until eggs are set. Cut into wedges.instead of ham you can use roast, chicken or turkey even tuna or shimp!
