Pine Nut Penne Recipe

How to make it

  • Large pan - put water on to boil for penne
  • frying pan - saute pine nuts in oil or butter til soft
  • halve tomatoes, add to nuts, continue saute til slightly melted
  • remove from heat
  • put penne on to boil when cooked turn off heat and drain
  • add tbs good oil to warm pan, return drained penne
  • add rocket, stir lightly
  • add pinenuts/tomatoes stir lightly
  • add 2 tbs shaved parmesan stir lightly
  • serve with extra parmesan on side and green salad
