GRILLED SHRIMP AND CUCUMBER SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nicholas Estate in Dallas, Texas in 1986.

Ingredients
  • 20 large shrimp peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup minced cilantro
  • 1-1/2 teaspoons minced garlic
  • 1/2 teaspoon minced jalapeno pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • Cucumber salsa:
  • 1 small cucumber peeled seeded and finely diced
  • 1 plum tomato finely diced
  • 1 green onion chopped
  • 1 tablespoon minced cilantro
  • 1 tablespoon sour cream
  • 1-1/2 teaspoons fresh lime juice
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon minced jalapeno
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon white pepper

Directions
  1. For shrimp mix all ingredients in medium glass bowl then cover and refrigerate 1 hour.
  2. For salsa mix all ingredients in a small bowl and set aside.
  3. Arrange shrimp on broiler pan 6" from heat.
  4. Cook turning once until pink and cooked through about 4 minutes.
  5. Serve shrimp topped with salsa and garnished with cilantro sprigs.
